Lighter-Than-Air Potato Rolls




Here is another recipe from 101 Farmhouse Favorites.

These rolls are super tasty and a cinch to whip up. They would be great for breakfast or the perfect roll for dinner.


Start by mixing together the potato flakes, sugar, butter and hot water.


Add cold water and biscuit mix and still till dough forms.


Make into a ball.


Knead 8 to 10 times.


Roll out and cut into 12 pieces.


Bake and enjoy with butter, jam or apple butter!




Lighter-Than-Air Potato Rolls:
1/2 cup instant mashed potatoes
1 teaspoon sugar
2 Tablespoons butter, softened
1/2 cup hot water
1/3 cup cold water
2 cups biscuit baking mix

In a bowl, mix together potato flakes, sugar, butter and hot water. Add the cold water and biscuit mix and stir until a soft dough forms. Gently form dough into a ball on a floured surface. Knead 8 to 10 times. Roll out into a 10-inch by 6-inch rectangle. Cut into 12 squares and arrange on an un greased baking sheet. Bake at 450 for about 10 - 12 minutes or until golden. Makes one dozen.

Root Beer Cake

 
I had never heard of Root Beer Cake so when I saw it in the new 101 Farmhouse Favorites Cookbook from Gooseberry Patch I knew I had to try it!
 
I brought it to the farm with lunch one day and I barely got a piece! The guys gobbled it right up! One of them even asked for the recipe! That's a success in my book!
 
If you are going to be serving this to a crowd I would double the recipe and use a 9 x 13 pan. I know I will be next time I make it!
 
For a made from scratch cake and frosting this recipe is easy and comes together in a flash!

 
Start by mixing all the ingredients in a bowl.

 
Mix.

 

Pour into your pan and bake.
 
 
While the cake is baking, make the frosting.

 
Mix all ingredients except root beer.

 
Add root beer and mix until desired consistency.


Root Beer Cake:
1 cup sugar
1/2 cup butter, softened
1/2 teaspoon vanilla extract
2 eggs, beaten
2 cups all-purpose flour
1 Tablespoon baking powder
1 teaspoon salt
2/3 cup root beer

Combine all ingredients in a bowl. Blend with an electric mixer on low speed; beat for 3 minutes on medium speed. Pour into a greased and floured 8x8 inch baking pan. Bake at 375 degrees for 30-35 minutes, until a toothpick tests clean. Spread frosting over cooled cake. Serves 8-10. 

Frosting:
1/4 cup butter
1/8 teaspoon salt
2 cup powdered sugar
2 to 4 Tablespoon milk
1/3 cup root beer, chilled

In a bowl, beat together all ingredients except root beer. Add root beer; beat to desired consistency.

Mommy's Pasta Fagioli


 
 
This recipe comes from the new 101 Farmhouse Favorites cookbook from Gooseberry Patch. 
 
This recipe not only tastes great but is also easy! My favorite kind!


 
Start by sauteing the onions and celery in the butter. 

 
Add the chicken broth, tomato puree and seasonings. Bring ingredients to a boil and then simmer for an hour or so.

 
Add the beans and cooked pasta and bring back up to a boil and serve!




Mommy's Pasta Fagioli
3/4 cup onion, diced
3/4 cup celery, diced
2 Tablespoons butter
8 cups chicken broth
28-oz can tomato puree
1/2 teaspoon dried thyme
1 teaspoon dried rosemary
salt and pepper to taste
2 15 oz. cans cannellini beans, drained and rinsed
2 cups ditalini pasta, cooked

In a stockpot over medium heat, saute onion, and celery in butter until onion is translucent. Add broth, tomato puree, thyme, rosemary, salt and pepper and bring to a boil. Simmer over low heat for on hour. Add beans and pasta to soup; heat through. Ladle into bowls to serve. Serves 8.

Cajun Macaroni


This recipe is perfect on a busy night and a great way to pack some extra protein and veggies in to that little blue box! 


Start by browning the ground beef.


Add onion, green pepper and celery. 


Mix in tomatoes


and Cajun seasoning.


Make mac n cheese according to directions. 


Add to the beef mixture.


Stir and enjoy!


Cajun Macaroni
1 pound ground beef
1/3 cup chopped onion
1/3 cup chopped green pepper
1/3 cup chopped celery
1 can (14-1/2 ounces) diced tomatoes, do not drain
1-1/2 teaspoons Cajun seasoning
1 package (7-1/4 ounces) macaroni and cheese dinner mix
1/4 cup milk
3 tablespoon butter

In a large saucepan cook the beef add onion, green pepper and celery, cook until beef is no longer pink and drain. Add tomatoes, Cajun seasoning and cook uncovered for 15-20 minutes, stirring occasionally.

Meanwhile, prepare the macaroni and cheese according to directions.Stir in beef mixture; cook for 2-3 minutes or until heated through.
