This week I whipped up a Banana Pudding Pie!
You start by making the crust. Use a food processor to crush the cookies into a crumb.
Add melted butter.
Press into a deep dish pie plate and bake.
Start to make the filling by adding the flour, sugar and salt to a sauce pan.
Pour in the milk and bring to a boil.
Separate and lightly beat your eggs. No need to create more dishes than needed, use your milk measuring cup!
Once the mixture starts to thicken turn down the heat.
Add a couple spoons full of the mixture to the egg yolks.
Combine.
Add vanilla.
Set-aside. Now to make the topping.
Add cream, vanilla and powdered sugar together and mix.
Mix until soft peaks. Store in the fridge until needed.
Time to assemble! Layer bananas on the cooled crust.
Add your pudding mixture.
Layer with remaining Vanilla Wafers and another sliced banana.
Top with whipping cream and chill!
