So, it has been down right cold and nasty around here and my poor hunny has been working outside in this mess making sure our bovine beauties are weathing the story. This included checking water fountains to make sure they weren't frozen, pushing snow and ice out of the way so the feed truck could make it through and triple checking the generator to make sure that if the electricity went out the farm would still have power. All on top of the normal everyday work. Yes, as you can see the cows come first. I knew this getting in to the relationship but there are moments (like when we had to leave in the middle of dinner with friends because the roof of the barn blew off or when we have to cancel plans because an employee can't work for whatever reason and the cows still need feed and milked 365 days a year, even holidays!) that I think how easy our life would be if the hubby had a job off the farm. But, all that being said my hunny would rather work out in this weather than sit in an office and I love the cows just as much as he does! Plus, we get to provide great tasting, nutritious dairy products for families to enjoy!
Speaking of food... so with all of the above I really wanted to make something for dinner that my hunny would love and that would warm him up! I was drawling a blank until I remember that when my friend Leah at Beyer Beware was featured on Gooseberry Patch she had a Beef and Noodles recipe that looked awesome. Well let me tell you it was a hit and by far the best beef and noodles I have ever had! So, I felt that I needed to share this recipe with all of you!
Leah's Beef and Noodles
1 Beef Roast
1 beer-can or bottle1 package dry onion soup
3 cloves of garlic
1 can of cream of mushroom soup
10 cups of water
1 pound of homemade (store-bought) noodles
Place roast in crock pot and pour beer, onion soup, and garlic over top.
Cook on low overnight. In the morning, break meat apart. Add the mushroom soup and six cups of water. Add salt and pepper to your liking. Cook on low all day. An hour before you eat, add noodles as well as more water. Up to four cups depending on how moist you like it.
Serve over mashed potatoes!

Do I need to cook the noodles separately first?

ReplyDeleteWe do this with chicken, we make a thick gravy with shredded chicken and cook the noodles in the liquid and serve over mashed potatoes, but this seems so much more "Fall" making it tonight! Can't wait!

ReplyDeleteNo they don't need to be cooked. Just keep an eye on them so they don't overlook and get mushy.
ReplyDeleteIs this suppose to be cooked all day with the lid off? It is really soupy. I can't imagine adding more water with the noodles.
ReplyDeleteI had to add some flour cuz mine was soupy too. Just put some of the broth in a bowl and mix in a little bit of flour. That way you can make sure you don't have lumps.

ReplyDeleteI have trouble with noodles getting mushy when you freeze them. You could freeze some of the meat before you add them to the noodles.

ReplyDeleteFound this on pinterest and we LOVED it!! Thanks! It made a ton, so we did freeze it and the leftovers were just as good. We used Reames frozen noodles, so that could be why it turned out so well after freezing.

DeleteJust made this tonight ~ DELICIOUS!!!!!!! I did one less cup of water @ the 6 c. point, & only added 2 c. at the end; also used NO salt, because both onion soup mix, & cr. of mushroom, tend to be salty enough! Hubby highly approved!! Served with mashed potatoes, & sweet peas. SO good!! Thank you for the recipe!!
