Gooseberry Patch Pumpkin Cheeseball

My friends all talk about how much they LOVE Gooseberry Patch cookbooks so I decided to, "join the club"!! I love fall and everything about it so I decided to buy the Homemade Harvert cookbook!


One of the first recipes I made out of it was the Pumpkin Cheeseball! It was very yummy and simple!



Add a softened package of cream cheese and an 8 oz container of chive and onion cream cheese, softened, to a bowl and mix together.  


add the paprika and cayenne pepper and mix.



  add the cheese


The recipe made a lot so I split it in two.


wrap and place in the fridge.


Shape mixture and top with broccoli stalk. Serve with crackers! Yum!

Little Man turns 2!

 My Little Man turned 2 over the weekend and we had a RED tractor party!!! Let me just say that it's a little difficult to find 'red' tractor things! Green has invaded and consumed the market!!

But, we happen to be a RED tractor family so, we did our best to have a RED party!

My Little Man called the entire day his "Happy Day"! He was sing-songing 'happy day' throughout the day and it was "MY Happy Day" whenever he was asked about his BD!

He loved everything about his happy day - his cousins, the cake and ice cream, the red balloons, the presents and even his new red tractor jammies (thanks Aunt Jill!) It was a special day! If you've read some of my other posts, you know how much I just love my kid's BD's!!!!

So, here's to Little Man's Happy Day!!!!

Quiche Lorraine - Freeze-O-Rama Style!

You haven't lived until you have meet up with 11 of your closest blogging friends and made a recipe 12 times so everyone could take 1 home to freeze. It was a Freeze-O-Rama party!! If you are new to the blog my hunny is a picky eater. He likes "man food" aka meat and potatoes. A couple days before the party he asked me what I was planning on making and I told him a Quiche. He looked at me and siad, "What in the world is a quiche?!?! and why would anyone want to eat something called quiche..." SO around our house this receipe is refered to as breakfast casserole!! :) Oh, and he liked it!! score!

Amy and I were both really excited to take part. What can I say, we have busy lives and how cool is it to have that much food sitting in your freezer for the hecktic days where you don't feel like cooking! Amy made a great kid friendly dish, Pizza Casserole! It was very yummy!!

In my opinion you can't have quiche without two things bacon and cheese!! Our hog farmer friend Heather over at 3 Kids and Lots of Pigs said she would be happy to provide the bacon! Let me tell you it was good! I just couldn't cook 6 lbs of bacon and not sneak a couple pieces!! She sells her tasty products locally and at farmers markets! I can't wait to try her other products!

So, in case you are wondering how much stuff it takes to make 12 quiches....Yes, that is a gallon of half & half!!


Quiche Lorraine

Ingredients:

4 eggs
8 slices of bacon
1 cup of swiss cheese
1 cup half & half
1/4 tsp salt
1/4 tsp pepper


  Cookin up the bacon!!


Measure out the bacon and cheese and place in pie shell, mix remaining ingredients and add to the pie shell.

I added some green onions to make it look pretty!!


Bake at 425 for 15 minutes, reduce heat to 350 and bake 30 minutes.

"I o yike it."

 There is nothing better than the first sentences to EVER come out of a baby's mouth!!!

My little man is turning 2 this weekend and he is talking like crazy! He has been talking for quite a while but he is now stringing those words together into the CUTEST little sentences that I will probably ever hear him say! Especially when you put his little facial expressions with them!!!

So, here's some of what I hear all day:

"Air doe" = Where did it go

"Dadee comeen" = Is daddy coming

"Wuv oo too" = Love you too (my all time favorite!!!!)

"Mise dink" = My drink

"Mise soose" = My shoes

"Mise tup" = My cup

"Mise" = Mine (you get the idea!!!!)

"Ess pay" = Let's play

"Go ousside" = Let's go outside

"Hi mommy" = (Plain as day!!!)

"Pay heeball" = Let's play football (not sure where this comes from!)

"I wide" = I would like to take a ride

"Peas" = Please

"Tea too" = Thank you

"I o yike it" = I don't like it (his new favorite sentence!!!)



You just gotta love it!! So, here's to the sweet, sweet sounds of first sentences :)

Freezing with Friends

Where might one freeze with friends?
A. In the middle of January, walking to class on campus.
B. In a church kitchen.
C. In the walk-in cooler while serving as a camp counselor.
D. All of the above

Correct answer = D!!!!!

However, this blog is going to be about letter B!

That's right - over the weekend, I had the chance to freeze with friends in a church kitchen!!! We had a freeze-o-rama party! We cooked, talked, laughed and cooked some more and when the day came to an end, each person got to take home 12 home-cooked meals with them! What a great day!!!

So, I decided to make something SUPER simple. Easy to prep and certainly perfect for freezing! I made Pizza Casserole. This recipe was given to me at my wedding shower (over 11 years ago!) and I've found it to be a great choice now that I have kids! It's quick and easy to prep, the kids will eat it and every time I make it, I double the recipe to freeze one or share with a friend. It's only 5, yes FIVE ingredients!


Here's how to make it:




Brown 1 lb. ground beef and drain.

  



Boil 1 small pkg. of elbow macaroni and drain.



Mix macaroni, hamburger, 1 can pizza sauce, and 1 can cheddar cheese soup.

  

Pour in to two 8x8 casserole dishes and top with shreded mozzarella. Bake at 350 for 45 min. and/or freeze!




Items needed to prepare 12 dishes for the freeze-o-rama... 


Finished product!




So, if you are looking for something fun to do with friends - try freezing!!!! The funniest part of the day for me - when I finished all 12 dishes and cleaned up my work space - this is what I found...
